Özet

Milk collection centres (MCCs) play an important role between the dairy farming and dairy industry in Turkey from the food safety perspective. MCCs, when rationally managed, can supply safe, quality, adequate and low cost milk for the dairy industry. In this article the knowledge levels, practices and perceptions of the mcc managers located in Izmir province with respect to food safety were examined. As a result, the knowledge level of MCC's managers on food safety, quality and practices was determined to be inadequate. In order to assure food safety in the milk sector, the managers and staff of the MCCs as well as farmers and also the staff of processing facilities must be informed on food safety, food codex and regulations and practices.
